Military Veteran opens food wagon in Dover-Foxcroft Featured

DOVER-FOXCROFT - "The food is excellent, I highly recommend it to everybody," one customer said.

"It's yummy, it's very delicious," said another.


Thomas Spencer was known for his cooking by locals and tourists at restaurants such as Spencer's Bakery and Pat's Pizza.


"People love Tom, they love his cooking."


Now, Tom Spencer, a Dover-Foxcroft local, is beginning his next culinary adventure. Found next to the Piscataquis Chamber of Commerce, Spencer opened Sergeant Spencer's Lunch Wagon.


"We love it. It's created such a buzz in this corner of the town which we're really excited about," said Denise Buzzelli, executive director of Piscataquis Chamber of Commerce.


Spencer said he's been in the business for more than 50 years, and he's taking his passion for food to a food truck.


He said he's been cooking since he was seven years old.


"I knew back then that's what I'm going to do the rest of my life and here I am, 52 years this year, been in the food business," said Thomas Spencer, the owner and operator.


Opening up a food wagon was something he always wanted to do.


"I wanted to give back to the community as well as the wounded warrior project and it's working really well," said Spencer.


Spencer is a 24-year military veteran and 100 percent of the proceeds every Monday go to the Wounded Warrior Project. Since he opened three weeks ago, he said he raised $1,000.


"They sacrifice every day for us, you know, our safety, safety of the nation, and I can't think of anything that I'd rather support than that charity," Spencer said.


Spencer said he loves what he does and that it doesn't feel like work.


"I like the public, I like dealing with people one on one and that's why especially I like the lunch wagon because I get a chance to meet them at the window, they say hi and the compliments mean a lot," said Spencer.
